Fastest most reliable 500gb SSD I can put in a Mac Pro

intel 320 600gb is probably what you're looking for, intel SSDs are by far the most reliable and their large capacity drives are decently priced.
 
if you want auto trim, just get the same 500gb ssd that they use int he macbook pros.

which is basicaly the v+100 kingston.
