Your 750W PCP&C PSU should be just fine.

They don't have the GTX 285 in SLI but they show it running about 10W higher than the GTX 280 (single cards) and they show the GTX 280 in SLI at about 580W (peak). So GTX 285 in SLI should run about 600W at peak load.
If you really want to spend $1000, pick up a pair of these cards (should be around $750, several available with rebates) and then spend the remaining $250 or so on a Q9550 (2.83GHz, 12MB cache). That should help push any games that right now support quads and will also cover you for the next year or so as more games are released optimized for quads.
