Fast/easy Vietnamese snack/dish?

It's my turn to prepare a snack/dish from my country for my class and I don't know what to make. I haven't cooked anything "Vietnamese" before (let alone cook much) but have ate Vietnamese dishes.

Could anyone help me brainstorm recipes with ingredients that are easy to obtain?

where were you born? if the US, you should cook hot dogs for everyone

edit: canuckistan eh? i'm sure you can find a good baby seal recipe somewhere...

order 100 eggrolls from a caterer. thats what i do. either that or volunteer to bring in plates (did that also =P)

Spring rolls..very easy to make and you don't even have to heat it up. It'll be a hit.

eww spring rolls. eggrolls for the win.

Edit. but with sweet and sour sauce spring rolls are ok.

eggrolls arent vietnamese. they're chinese. spring rolls are vietnamese. i like spring rolls better than eggrolls anyways.

Banh Mi sandwiches like the ones from Lee's Sandwiches. Buy the materials from the local 99 Ranch and just cut them up and serve.

BANH MI!

with the variety of toppings.

thit ba (beef)
thit nuong (barbecued pork)
thit (pork)
bi (shredded pork)
xiu mai (meatballs)

and then add
the pickled carrots and radishes with cilantro and jalapeno peppers... Go to any banh mi store, they make it fast for about $1

I went to Lee Sandwiches, expensive...
in Seattle, Seattle Deli, no duh.
