We are running exchange server 5.5 and I was wondering if there was a way to take someone's contact list (Which is their address book) and display it on another machine?
 
You should be able to right-click and share the contact list.

Simply sharing and then opening the other (file>open>other user's folder) should also work, as detailed here for calendars, but applicable to other folders as well.
