I have tried two 2x2gb kits (OCZ and Super Talent).

With both, the system often hard locks when booting, even at stock settings. What happens is as follows:

I hit the power button:

25% of the time, I get long beeps and no video.
25% of the time, I get corrupted looking BIOS-POST screen
25% of the time, I starts to boot, then it hangs while booting
25% of the time, it boots OK and then is fairly stable

Help?

Ram is at default voltages. I have a 2x 8800GT and a Corsair 620W power supply.

You are giving huge amount of stress to the north bridge. Assuming the rig in trouble is in your sig, your NB is handling:

8GB of RAM
2 high-end (read: fast data exchange) GPUs
400~450 FSB

It is not surprising that you're running into trouble, to be honest. You will need a very good board and good cooling for everything to pull that setup out. Up'ing voltages and enhancing cooling is just about all you could do but even then the board might not be able to co-op very well.
