What I HATE about it is that they usually make it a two parter: cut off thin slices of meat and skin to let you make wraps, then take the rest of the duck back to the kitchen, strip the meat and stir-fry it. The second part is usually shit. Just fillet the bird and give me the juicy clean meat.
Done right, most of the meat is sliced off and the stir fry bone is awesome (or option for soup). That's two full dish for two person for thirty something bucks is darn good.
BTW one option in hk is roast goose.. bigger than duck.. not sure if I wanna try it

eating peking duck in beijing is absurd.
well if you're all gonna go purist on me, the ducks need to be of a specific breed in peking duck, so no duck outside of peking is going to be peking duck.
Much like Tea in the Sahara.
Roast goose is awesome. Less fatty and the meat is firmer.
Best Peking duck in the world is at R&G Lounge in SF - and because they serve so many of them a day, you don't have to order 24 hours in advance. They do run out if there are a lot of people eat the duck for the day.
As for using the thin buns or "pancakes", it's preference, because they're made from the same shit. I prefer the buns.
