Ever had ground Lamb?

We use ground lamb in stews and meatballs quite often. It works well with beef. Bacon would add sweetness to the chili. I kind of like the idea of being able to offend almost every major religion with a single bowl of chili. :p

We brown and drain the lamb before adding to stews.

Yes, lamb can be pretty fatty. I usually just get the frozen chops imported from New Zealand. I find it better than the domestic stuff. Not sure why. I think they use a different breed there.

And yeah, don't overcook it. Red meat should never be well done.
the GF and me love lamb.

we find local or Ontario lamb to be much higher in quality and taste compared to the imported stuff.

I found a de-boned leg of lamb at a very good price the other day.

lamb is great in chili. If you can only get it ground, then I suggest sauteing it as you would ground beef--get a nice brown on the outside and cook out a bit of the fat.

Or, better, get lamb stew chunks, or an entire leg or shoulder cut, and cut them yourself. I much prefer large stew chunks of lamb, well-browned but still tender and juicy when it comes to chili.

Don't talk to Quebert--he's going to claim that lamb does not belong in chili. (granted, you only mentioned lamb in the title, and not chili. Thus he will likely never click on it because he only eats peasant food, and thinks it fancy.)

Brown as in Maillard reactions, not just "cooked til no longer pink." (Most of you probably know this.)

Ground lamb makes the best burger ever. Don't overcook it. I mix mine with seasoning including curry spice. Very tasty.

Seems like a waste of money to put ground lamb in chili. Ground lamb goes GREAT with mint. Lamb-mint burgers are delicious.

Years back a neighbor and I went to a local italian restaurant. It was not on the menu, but he ordered a burger that was 1/2 ground lamb and 1/2 ground beef. I was game for trying it. It was too long ago to recall a description of the taste, only that I was mixed on liking the results. So if you are experimenting, try a burger with 100% lamb and another with 50/50% lamb and beef. Then decide how you want to make your chili.

Bison is about the best meat you can put in chili, IMO. I would automatically rank a chili the lowest if it had bacon and I was judging. Obvious pandering to this annoying bacon fad, and not a good meat for chili.

Lamb has a nice texture, but I think Bison is more flavorful, and the texture lends itself to chili better.

My family, parents included, have been making chili with bacon since I was a wee lad, well over 30 years. Cubed bacon, cooked in the pot, and then using that fat to help brown the other meats, gives great flavor to chili and goes well with it. I've won a few competitions (all at work) with the bacon in my chili.
