I just bought a p5b (non-deluxe), 2GB Crucial Ballistix PC6400 C4, e6320, leadtek 8800gts 640 and a p180.

Just a few quick questions:

Will I be able to get to 3GHz with no fuss?
Will the gfx card fit without having to take off the chipset heatsink/other bs?

I bought it all in a rush to get saturday delivery. Could have sworn it was Thursday.
 
Overclocking prowess also depends on your cpu heatsink.

I believe your video card should fid the Antec p180. Cant comment on the mobo as i havent worked with that model personally.

Where did you order your parts?
 
3ghz should be doable without at least to much of a fuss. But it might require some extra voltage, and you're gonna run on stock cooling? And the leadtek should fit just fine ...

You realise that asking for advice on a build after you've bought all the parts is doing it the wrong way round, right?

Well, at least you got some good parts. Get an aftermarket cooler. The graphics card should fit fine. You will get to 2.8GHz fine, just jump straight to FSB 401MHz. Past that is down to luck on how well your memory overclocks but frankly those sticks should be good up to 3.2GHz or so.
