Setting up ESXi4 for jumbo packets is actually not hard as long as you do it when you first set up the host, not after you have been using it... VMWare has a step by step guide on the internet. So does Dell for the MD3000i's (which are Equalogic units.) The key step is setting up mutlipath correctly at the same time. ESX(i)4's method requires a different config that ESX(i)3 so make sure you are using ESX(i)4 docs as there are tons of docs on the web that will just say "esx(i)" and really be 3.0 / 3.5 which will not work on 4 (correctly at least).

Good ways to know if your looking at esx(i)3 docs
1) all iSCSI controller ports are on the same IP subnet. 4 requires 2 subnets ie 192.168.1.x 192.168.2.x
2) There is an cable or aggregate group connecting the 2 switches - Don't need this any more
