Easy way to archive IMAP mail?

I'm looking to change web hosts soon, and I've got a few email accounts that have been using IMAP, including my own, with quite a few folders and messages I've made. The new host says that it isn't easy to transfer mail from one server to another. What is the best way to archive the mail that's on the mail server? I'm thinking I can transfer all the messages in each directory to the INBOX and then POP it to some client, but is there anything out there that could read the IMAP mailboxes and save a local copy, retaining the directory structure? Thanks for any info!
 
just set up the new account and copy the messages and folders over.

Assuming you have a decent client, it should just work.
