Dynamic Screen Capture for Digital Video

I'm planning on making some instructional videos using a mini DV camera and Adobe Premiere. I would also need to include some dynamic screenshots (Windows 2000) of my doing some editing, compiling, running of applications, dragging, dropping, etc. Are there utilities available to do that kind of thing (like some of the static screenshot utilities) or do you just set up the camera on a tripod and aim it at an LCD screen and shoot the material?
