DVD editing software/steps

Okay so I'm not exactly big on video editing. I've used virtualdub a few times here and there to do some simple splicing, but that's the extent of my experience. No fades, title screens, menus, etc.

I just converted a bunch of home videos (VHS, 8mm cassettes, and MiniDV) to DVD. We kind of hit dub and walked away, so there's a bunch of dead space. I'm looking at a stack of roughly 25 single-layer DVDs with video.

If there's a guide for what I'm trying to do, please point me in the right direction...

I'm trying to rip all of the DVDs in their regular format to my harddrive. Then I want to do some splicing (some of the videos span multiple DVDs) and organize all the clips into a menu that makes sense. What am I looking for? Are there open-source/freeware applications that can do this? I have access to a Mac if the iLife suite is a good way of doing things, but I'd like to work in a windows environment. (The Macbook doesn't have the harddrive capacity to handle this.)

it's not free but I always had good luck with Ulead's Movie Factory. Easy to use and it will do all the things you are looking for without too much fuss...mostly drag and drop and It's reasonably priced. I used it to put multiple episodes from shows I had downloaded onto a single dvd. It created the menu and converted from just about any codec to DVD that I threw at it. I haven't used it a couple of years since I got an HTPC, but you should definitely give it a try.

I second the ulead software. They should have demos on their website so you could see if it'd work for you.

Windows Live MovieMaker might be able to handle it as well, and it's free.

If all you are doing is cutting out dead space, windows movie maker can more than handle it, is free, and is likely already on your computer.

Ulead can be had for $39.99 on their web site (for the better version)
Not a bad price at all. Normally $79.99
