OK, so it's been a couple of years since I have used dual displays. I have two LCD's setup with a eVGA 6800GT.

My question is how do I configure the displays so they don't span full-screen video or games over both monitors? Right now, when I open something is full-screen, it spans both displays. I want it to open in full screen on one of the two monitors. Is this even possible?
 
In your Nview display setting you need to setup your monitors to a Dualview mode. You probably have it set to horizontal span right now. That should allow you to set separate view settings for each monitor and open up progs on each one individually.
