I was just wondering, what sort of preformance boost will i be looking at if i change from a single modul of DDR333 512mb, to 2 DDR400 256mb chips running on a dual channel!

I am running a P4 2.8c.

The P4's biggest strengths are in it's raw speed and bandwidth. Since this upgrade would be going from 2.7GB/s of bandwidth to a staggering 6.4GB/s I think the performance increase would be worth it. Plus, then your processor bus and the memory would be running in sync with each other which is always ideal.
