Because the liquid N2 cools down the cream REAL fast , the ice crystals in the ice cream are very small. Makes for a very smooth ice cream.
 
hey grad a phone book and look for a local ice manufacture. overe here i can get a pound of ice for a quater and after you get your hands on the dry ice... whats your plans with it? bomb? fog effects?

The problem with dry ice for fog effects is that it works fine initially, but when immersed in water, it ices over and covers the dry ice, and the fog becomes less and less, until very little comes out. That's why N2 works better.

Sure, its just liquid Air. You may need to rent (or borrow) a dewer to transport it, otherwise it will boil off rapidly in a regular container.
