Believe it or not, some people learn for its own sake. They find the world interesting, and want to know more about. They aren't as interested in "buying" a job.

Economics is interesting to some people. Not me, but some. It's a complicated area of of study, and you could study it for a lifetime and not know it all. Besides, he has more on his resume than economics.
 
Sounds like he was teaching and always working on a new degree, or working on a new degree to get another teaching gig.

Some of my school's courses are taught my PhD candidates... lazy professors.

My guess is the bolded ones are the degrees he earned, the regular type ones are all honorary degrees from international institutions that he taught at, and the italicized are profession certifications that you can get somewhat easily with some self-study.
 
He could be someone who just constantly stays in school and maintains a job on top of it... People already do that... why is it hard to believe he just decided to do it for longer than most people?

And besides that, almost all of his degrees are related.

I'd be much more intrigued if he went for degrees in fields that are vastly different from each other.

If you do it right then a lot of those degrees would just be an additional year or two. Three years tops.
