I'm of the you can't truly appreciate something unless it has an end kind of person, so dying at the end of the ride for me is seen as a plus.

I understand what you are getting at, but I think that ends are definable by us. You define the end as death, I will simply learn to define it by other variables. In the next few billion years there will be many ends, and if I can achieve immortality I’ll be there to appreciate each one. Something of the texture of existence would change, but I don’t think it would be less, just different.
 
You are perpetually in the state you are currently in. If you get evaporated from existence you just reappear because you cannot not exist, you are immortal.
What if you get sucked into a black hole? Where do you reappear? 😀
