Half-Life: I played a it a couple of times, but there were huge gaps in between each sessions, like months long gaps, even years.
Half-Life 2: Only played it and finished it two times, once at Normal, another at Hard, since then, not at all (which means since early 2005). I've been playing quite a lot of Half-Life 2: Deathmatch though.
Half-Life 2: Episode One: Only two times, like above.
FarCry: A couple of times, similarly to the original Half-Life, with gaps in between, but I don't actually finish it each times. I just use the DEVMODE command and play in chosen levels.
Doom 3: One time and I was perhaps too much. I won't touch it ever again.
Prey: Two times, finished it both times.
S.T.A.L.K.E.R.: The only exception I can remember. I must have played it a lot since I bought it, and I finished it already ten times or so, with different modifications (that's what makes me play the game, some of the mods are awesome). It has some RPG-like elements so even though it's a first person it's still quite addicting.
Oblivion: An RPG viewed in first-person, what could a true gamer ask for really ? Not much. That one, besides Diablo 2, has been the game I've played the most in my life and I can't get bored with it, I just keep playing and playing and trying different mods that STILL to this date come out by the hour, fresh and ready to be tried. Same thing goes for its expansion.
Halo & Halo 2: I finished Halo a lot of times especially in co-operation. Very fun game. I still finished Halo 2 around four or five times but I prefer the first one.
Turok 2: Seeds of Evil: Yes, very old game, it came out the same year as Half-Life, 1998, but I still play it to this day, from time to time. I got the PC version and the N64 version as well. That game is the only FPS that was originally released on a console that I still like and play sometimes, other than the Halo series.
Overall it depends on the game, but games like Half-Life and Doom, and Call of Duty, games that are scripted to the bones from A to Z without any type of unpredictability, are the types of games that I can't stand more than one or two times, sadly.
