Indeed! It's damn good fresh. Only problem I have is the toppings, it's hard to find any quality toppings in the store. Not really fresh. Maybe I should get the pepperoni from the deli or something, but that might've been sitting around for a while too. Don't have any problem with the cheese, it comes out great, just use mozzarella.

The best place to get meat toppings is straight from the butcher/deli when they cut it up in front of you... or that day... best thing to do is get friendly with the butcher and he will tell you what is fresh or not..

Yes and no. Depends on if you define "from scratch" as making your own dough. If not, the wife and I routinely by pizza dough from a local shop (Portland Pie Company) and make our own pizza. In the summers, grilled pizza is a staple at our camp.

My wife makes great pizza. Fresh dough, tries different sauces, sneaks some vegies in and it's a great way to finish off leftover meats. Yum!

Haven't in some time, actually makes a decent eat. Length of dough making and how decent and cheap the frozen stuff is though means it doesn't happen as often now.

The secret to making good homemade pizza is a hot oven, and put olive oil on the dough before adding the sauce.

I've even made my own mozzarella cheese. It's actually fairly easy. The hardest part is finding rennet, which helps the milk curdle. Otherwise you can make a 3 lb ball in less than an hour.

My favorite pizza involves hardwood charcoal on the grill, a pizza stone, Rao’s Marinara sauce, fresh mozzarella slices, and basil leaves from my garden. Get the coals nice and hot, bake the pizza with indirect heat for about 10-12 minutes, and WOW. Best thing on the planet.

Also, in a pinch, naan bread makes an awesome pizza crust.

I haven't time for too much input but those are good tips. To that I'd add a heavy pizza stone.

My wife and have been making homemade pizza for years now. It's usually every Sunday. She uses a Cooks Illustrated dough recipe so that we usually end up with enough dough for three pizzas and freeze two of the dough balls. Total price per pie ed up being around $3 and it's damn tasty.

I used to make my own dough but the payoff isn't worth the effort when the grocery store sells fresh dough. Other than that, yeah. I have a pizza stone and peel.

Seriously, try using naan bread for a quick crust. It'll look like this:

Not sure how they can fuck up pizza dough. Flour/water/yeast/olive oil. :hmm:
Yeast doesn't remain active too long - dough needs to be used usually within a couple of days unless you use some chemical magic.

My brother does this from time to time. His pizzas are pretty good.
I prefer Lou Malnati's, so I would rather just get lou malnatti's.
