Do you have to join a "team" for DC projects (Folding/SETI)?

No, you don't have to. Although I think it's fun to be a part of a group.
 
No, you do not need to join a team. (Although, I think if you start folding without joining a team, you are on the "anonymous" team)

There is a fun aspect to being on a TeAm. And it is easier to check your stats (this might not be true ... I just don't know how to check otherwise).
 
I agree, you would be part of an anonymous group and that would be rather boring. To do any DC project, you should prefer to see yourself as a part of a team. As a "no name", you still complete WU's, but only as a group of anonymous individuals, rather than a large group, that has combined points and it doesn't isolate you for partaking. The only thing you can possibly gain from this is satisfaction for the help in finding a cure.
 
FYI: I joined AT's teams for both SETI@home and Folding@home. 🙂

Both are running on a Core 2 Duo T9500 system btw.
