Do people actually still eat Cool wHip?

For something fancy and important maybe, but for random pie that's an awful lot of work. I prefer pulling off a lid.

How long does it take to bake a pie? 15-30 minutes prep, an hour of baking, another hour of cooling?

How long does it take to pour some cream in a bowl and beat it? Maybe three minutes?

Oh, I suppose this is for store-bought pies... well in that case I guess you're not exactly missing out on anything by using Cool Whip.

Cool Whip is a non dairy topping, so it doesn't even have cream in it. I use it for pies, things like Hot Chocolate I use Reddi Whip.

Hmm, indeed:

Cool Whip Original is made of water, hydrogenated vegetable oil (including coconut and palm oils), high fructose corn syrup, corn syrup, skim milk, light cream, and less than 2% sodium caseinate (a milk derivative), natural and artificial flavor, xanthan and guar gums, polysorbate 60, sorbitan monostearate, and beta carotene (as a coloring).[5] In some markets, such as Canada and the United States, Cool Whip is available in an aerosol can using nitrous oxide as a propellant. Cool Whip was formerly marketed as non-dairy, but in Jewish dietary traditions, Cool Whip was classified as dairy rather than parve (non-meat and non-dairy) because of the sodium caseinate (which is derived from milk). Cool Whip now contains milk and cream.

I'd sooner have ready-whip... but I don't consume enough whipped cream to keep either in my fridge on a regular basis.

I'd be a lot more inclined to just make it myself as needed for cake or pie or whatever.
