Do ketchup and mustard belong in the fridge?

but that's before it's opened. Mayo is not refrigerated before it's opened, and there is no way I'd store that outside the fridge after opening it.

Ahh... good point. So what about bread. I put those in the fridge too, but for a different reason. Since I put my peanut butter in the fridge, it's all hard to spread, so to make the bread a little harder too I put the bread in the fridge. Seems to work...

So what about bread.

The bread keeps almost forever in the fridge, waaaay longer than leaving it out. Plus, you're right, it's easier to spread thick stuff on :)

There's more moisture in the fridge, therefore the bread will go bad faster

we always kept our ketchup in the cupboard and then my brothers fiance complained about how it should be refridgerated.

Wrong. Storing bread in the refrigerator keeps it from growing molds. Moisture does not matter as the water activity of bread is already between 0.91 and 1.0.

Sure thing. The heels of the bread loaves tend to accumulate in my bachelor fridge, lemme go pull one from several months ago and show you there's no mold still ;)

edit: also, the inside of a fridge is drier than outside air....the freezer is drier still. It's a function of cold air, colder air holds less moisture.

Molds grow optimumly at a water activity of 0.6-0.85 with certain molds being able to grow at higher water activities. By storing the bread at room temperature in a plastic bag which is aerobic, particle transfer occurs. The bread will then move towards equilibrium with the relative humidity of the environment. In general, most rooms do not have a high moisture content, therefore the bread will actually lose water. The loss of water decreases the overall water activity of the bread, placing it at near optimum temperature and water activity for mold growth.

But but.... I have had bread in the fridge, and it got moldy . Not like after several months but like few days/one week.

i keep my bread in the fridge -

bacteria and fungi don't like the cold

keep thing in the fridge! why not!

Hell yes they do! Have you tasted a difference between brand new bottle of ketchup vs ketchup you opened up and stored in cupboard until you use it up?

When my ketchup was almost empty, I opened up a new bottle of exactly same Heinz ketchup and the taste difference was night and day.

True, but a bottle of ketchup at a restaurant probably gets used up LONG before a bottle of ketchup at home.

True, but a bottle of ketchup at a restaurant probably gets used up LONG before a bottle of ketchup at home.

Let me rephrase,
Have you ever seen a restaurant throw away or clean out their ketchup bottles? Didn't think so. ;)

Yes amnesiac, they keep fine at room temperature. They keep fine, but at the storage length it encounters in the typical home use they do deteriorate in taste. Another thing you must consider is restaurants don't refrigerate them, but they have a much faster rotation cycle. Food service ketchups are usually in 12oz or so size and I doubt any given bottle goes over a week before it's exhausted.

How long does a 24oz bottle of ketchup last at your house? I'd say at least a month unless you have a crap load of kids.
