I was thinking I could buy a electric van and use the main battery to power a laptop and a refrigerator and such, but I'm not sure if the main battery is used for that.

Why wouldn't you just plug your appliances into a wall? I doubt you're going to be taking your fridge to go.

Sure, you could probably use the electric supply of the van to power stuff if you want to live in a van down by the river, but not so sure that's a good idea...

There are cars with that function like the Hyundai Ioniq5. But obviously there is an amperage limit.

LiON batteries in cars are a fraud. Electric cars really Run on static electricity, but you wouldn’t pay $60k for a car that used 'free' energy, so here we are.

Yes, depending on the vehicle. Multiple EVs, like the Ioniq 5 and R1T, can power typical small appliances and tools.

Ford is even touting that the F-150 Lightning can power an entire home for up to three days. Mind you, if you're in a situation where you're likely to be without power for more than a day or two, you probably want to save some charge in case you need to bug out.
