DNS Noob question

We have our main domain xxxxxxxxxxxx.org hosted with a vendor.

We want to get our own managed server box and run other sites from it. But we want all these sites to be subdomains.

ie.:

business.xxxxxxxxxxxx.org etc

Do we have to run our own DNS for this? - or does the vendor holding our domain have to do this?

Just update the A record on your primary name server to reflect business.xxxx.org points to the ip address of your colo box.

/edit to clarify you do not need to run your own DNS server, you just need to make the change on whichever name server is authoritative for your current domain. You can host infinitely many sub-domains.

Our registrar's dns would be the authoritative one right?

No, in the panel where you manage your domains on your registrar there is a section for name servers. These are the name servers that are authoritative for your domain. It is likely that your current hosting provider maintains these, so you should contact them to add the appropriate A records. If you need more specific information regarding your particular namespace, feel free to PM me and I can help you from there.
