LOL. i thought japanese food had made in into US society pretty well by now. Mayb more in So cal tho- This thread reads as if it was 1990 =P

okonomiyaki is my top j-dish rite now. since its impossible to find a coroke place around here =(

Korokke is easy to make at home. For a nice change, pour some tonkatsu sauce on top and slap it between two pieces of bread.
 
I love sushi! but i don't like anything else Japanese food wise. Bland flavored sea plants and weird garnishes with fish eggs are not my thing.

I was a chef 15 years ago, and I specialized in a certain area (I actually have a 2 year Culinary degree from The Arts Institute in southern Ohio---I'm sure you'll find ways to make that inadequate too) . I know about a lot of different kinds of food that you probably don't know exist. I know very little about Japanese food because it is not popular around here and is not represented at all. From what was presented to me, it was a mess. If it was not authentic, I have no idea. It's something I always wanted to try and did not enjoy my experience.

I worked as a chef for a catering company for 10 years and served over 1.2 million customers. Don't generalize about people you don't know to make yourself sound superior on an internet forum.

I mean, you must have taken a Asian food course at your cooking school. I'm looking at the Culinary Institute of America's curriculum and Cuisines of Asia is a 1st year course for them.

Yep, I hate american food because donuts aren't my thing. I also don't like Chinese food because fortune cookies aren't my thing. And I don't like French food because french fries aren't my thing, either.
 
It's not Japanese when you see the following items in your food or on the menu:

1. Cream cheese
2. Avocado
3. Broccoli in tempura
4. Anything besides kelp and tofu in miso soup
5. Regular rice in nigiri and sushi (it's supposed to be vinegar rice)
6. Nothing less than 4 different kinds of soysauce and dressing

Fail.

Miso soup has varing ingredients depending on region and season. Even the dashi is made with varying ingredients.

Sushi is vinegar rice. If you use regular white rice you've made some weird form of onigiri.

I don't even know where 6. came from...

It wasn't in 1990. We did study Chinese techniques for wok cooking, but I spent most of the time in the Euro-French side.

Nope, Ay Ay Picante on Elston north of Montrose. The place was pretty highly reviewed on Yelp (four stars) and I even read some reviews of people that said they liked the dish I ordered (some sort of braised lamb.) The flavors were not good, the bones were all in the meat, and it was extremely fatty. Interesting note about the asian influences though, I didn't really taste it.
 
That's because cream cheese belongs only on bagels or in cheesecake. It's not authentic Japanese, and any place that tries to convince you it is, is lying. And, just because you're a chef, doesn't mean you'll enjoy all forms of ethnic cuisine. But yeah, what you listed sounds gross. Miso soup is hit and miss. If the place chose poor ingredients, it'll taste awful -- you should understand that as a chef.

I live in LA, so I'm not encumbered by 3rd rank Japanese restaurants. Not a snub per se, but unless it's NY/SF/LA/Chicago, the japanesese restaurants in the area are probably shit.
