Disable new Windows Defender System Tray icon

Right click on the caret (^) and click Settings. Scroll down and click "Select which icons appear on the taskbar", then just turn them off/on as you need.
 
What if I have a third-party AV, does it go away?

It depends.

At home i use ESET smart security (nod32) and windows defender is automatically disabled when eset gets installed. There is no need to run two security suites at once.

At work i have the sophos security suite and for some reason, windows 10 pro refused to accept that i have the sophos security suite. Unfortunately W10 pro kept enabling windows defender at the same time as sophos is running. I had to go into the group policy editor to disable windows defender.

I have no idea why Eset smart security is accepted by Microsoft and sophos not.
