So, I've got to figure out what to make for dinner tonight, and I'm braindead. Nothing sounds good.

Give me your ideas. It's snowing out, and if I don't take action, the wife will make her mediocre broccoli cheese soup.

What kind of meat and vegetables do you have on hand? What sort of canned goods (corn, beans, tomatoes, etc)?

Go to Costco/BJ's/Sam's club and get one of their big racks of pork ribs. I got a pack of 3 full racks last time I went to BJ's for $18 and they were amazing! :D

If you don't have a membership then get a day pass.

The other thing that's good at Costco is the 5 dollar rotisserie chicken. Just make a side of mashed potatoes and some sort of veggie to go with it and you got a meal.

Chipotle Tamale Pie Recipe

3 defrosted chicken breasts
1 onion diced
1 green bell pepper diced
1 red bell pepper diced
4 cloves garlic, minced
2 teaspoons ground cumin
1 can (15 ounces) low sodium kidney beans, rinsed and drained
1 can (8 ounces) no-salt-added stewed tomatoes, undrained
2 canned chipotle chilies in adobo sauce, minced (about 1 tablespoon)
1 or 2 teaspoons adobo sauce from canned chilies
2 cups shredded Cheddar cheese
1/2 cup chopped fresh cilantro
1 package (16 ounces) corn bread mix

Boil chicken for 20 minutes then shred with fork. Set aside.

Preheat oven to 400°F.

Heat a large nonstick cast iron skillet over medium-high heat. Combine onion, bell peppers and garlic and cook until onions are translucent, stirring occasionally. Add shredded chicken and cook another 4-5 minutes. Sprinkle mixture with cumin. Add beans, undrained tomatoes, chilies and adobo sauce; bring to a boil over high heat. Reduce heat to medium and simmer, uncovered for 5 minutes. Remove from heat; stir in cheese and cilantro.

Prepare corn bread mix as directed on packaging. Compact prepared dish in skillet and pour corn bread over the top. Bake 20 to 22 minutes or until corn bread is golden brown. Let stand 5 minutes before serving.

The recipe above makes about 6-8 servings. I usually split everything between my large cast iron skillet and my small cast iron skillet. If you don't have a cast iron skillet then just transfer everything to a few of those Pyrex casserole containers before pouring the corn bread on top.

- pick up a pack of pre-cooked chicken strips that you can just heat up
- grab a bag or head of lettuce
- black olives, green peppers, tomatoes, onions if you like them
- get some Kraft greek & feta dressing
- nice fresh pitas or flatbread

heat up the chicken and mix up the Greek salad and have awesome Greek salad & chicken wraps.

you can substitute with many types of salads. very fast, healty and most importantly delicious!

make some pizza. i was going to myself, but my daughter got some coupon for a free kids buffet at pizza inn and has nagged me to take her :/

it's not really cooking per se, but it's one of my Lazy Ass Husband meals :)

wifey's out, and you'd know it if you could see me eating cold Little Caesar's pizza (lunch leftovers) right out of the box - at the computer.

a minute ago i had to look down to make sure i was eating pizza and not the cardboard box :Q

it was terrible when i had it 5 years ago. meh.
local pizza ftw people. franchises usually suck it.

Buy a 1" thick strip steak. Put some black pepper, garlic, cayenne pepper on both sides. Seer 2.5 minutes on each side over medium high heat. Done.

My old standby is a deli near my house. Of course I'm "cooking" for one, but I usually grab a fried or baked chicken breast and thigh and a big thing of cole slaw. Dinner is served, all for ~ $5.

Get some fresh fettuccine, fresh broccoli, chicken breasts or tenders (or the precooked chicken strips that they have in the deli for salads), and some fresh pesto. Cook chicken, add pesto, throw the broccoli in boiling, salted water, when it comes back to a boil, toss in the fettuccine, cook ~3 mins, drain. Toss the pasta and broccoli on a plate, add chicken and pesto. Done in about 10-20 mins.
