Different setup... decisions, decisions, decisions!

I currently have a system with a GTX 295 and a Gigabyte ep45 ud3p. Lately i've been having an itch to get a better graphics setup, i am looking at gtx 285's. Would it be worth it selling my gtx 295 and pick up a pair of gtx 285's and having to get rid of my current mobo and pick up an SLI capable motherboard(nvidia chipset)? I don't know much about the 700i's but i do know my current gigabyte ep45 ud3p is pretty beastly for OC and overall quality.
 
I'm curious, what games can't you run at full resolution and detail settings with the GTX295 already? Do you have a 30" monitor that does 2560x1600?

I game on 1920 x 1200.

I just want the scoop of p45 in general vs 700i's in general.

If i'm going to let's say a 780i FTW. Could I get to 4.0 ghz with my e8400 as I would on my gigabyte ep45 ud3p? Using around the same voltages? Also, do the nvidia chipsets really do have problems, like will i get errors and crashes more often than I do with my P45?
 
I game on 1920x1080 and my 295 can usually churn any game I throw at it, although there are SLIGHT hiccups here and there. But I think it's being bottlenecked by my processor speed. If I manage to get a clean OC I will let you know how it goes. Otherwise, dual 285's would be decent because I believe the 285 is the fastest single-core card out there right now, so SLI'ing those two would easily beast a 295.
