Did pretty well fishing last night, but ran into some trouble

Had an awesome time yesterday with the friends out in Sarasota Bay. Caught a bunch of keepers; 3 Flounders and 2 Snappers.

What's the best way to cook up a flounder filet? Maybe bake it in the oven in tin foil with butter?

On a side note, one of the guys caught a nice lemon shark and hooked something MUCH larger right after sunset, but the line snapped before he got it in. Whatever it was though, it was big, I don't think i've heard a line run that fast before. It circled the boat 4-5 times, the pole almost folded in half when it got in close.

We also had a little trouble just as we were about to head in around 8pm after it was dark. We had been drifting through a pass just relaxing and ended up beached on a sandbar out in the gulf during low tide. Its an odd feeling getting out of the boat a good 500+ feet from shore with water only going up to your calves. We started walking the boat out, only to get it beached further as we couldn't see which way to get off the sandbar. At the worst point, the water was no deeper than 6 inches, the boat would only move as each wave came through, so it took a long time to get it out. Took about an hour, but we eventually pushed it out. At one point, at its worst, we all decided to walk out in 4 directions from the boat and see which way led to deeper water. Its pretty darn freaky just walking towards darkness in the hope that you will eventually drop off the edge of the sandbar.

Nevertheless, we had a good time 🙂


 
We used to cook Flounder on the grill with butter and lemon. About 7 years ago we could catch our limit in a couple of hours at the locks in Cape Canaveral. Now you would be lucky to catch a catfish.

 
I can't believe I'm going to say this, but fried flounder is awesome with hush puppies, corn on the cob, cole slaw, and beer.

Who doesnt like a fish fry? Flounder is great fried.
 
I'm an advocate of healthy eating these days, that's why I said "I can't believe I'm going to say this..." 😛 If my coworkers were to see that they'd flay me.
 
We never filet flounder, just remove the head, guts and scale.
Then make a stuffing of breadcrumbs, crabmeat, sweated finely diced onions, celery, and green pepper, egg, creole seasoning, and butter. You want this to have the consistency of a good crab cake, meaning mostly crab!

Fill cavity with stuffing -- careful not to overstuff, lemon slices, dust with a little paprika and bake until golden on top.

EDIT: ok, I'm exaggerating, we do usually filet flounders over 3lbs or so, usually do this with the smaller ones.

i never did like slaw, though. but yeah, fry the bastards!

and they drove off in his carp.

p.s. I still kelp her picture in my walleye, just for the halibut
 
Cover in Tony's, sput some Worchesthire (sp?) on it, throw it on the grill. Yum (with homemade mashed potatoes or maybe twice baked potatoes and steamed asparagus!)
