I have a problem I'd like to solve, but I dont have much knowledge in DHCP design.

Sample:

32 shops scattered throughout the United States, U.K., and Switzerland.

Company wants to move to DHCP using private IP addresses.

Each shop only contains 3 computers, but all shops need to communicate with corporate headquarters in New York.

Design a DHCP solution for these locations.

Do you need seperate DHCP servers for EACH location to handle addressing?

It depends on how all of them are connected. You don't need seperate DHCP servers, but you do need at least one DHCP relay agent per network segment.
