I know you sent me an invite but what do I do to accept/enable the tag?

What do you mean? To show the clan name in the game simply go to the clan page and click the button that says "make this my playstation clan" or "make this my xbox clan"

Can only select a clan on bungie.net

Yes and maybe contact the members through PM or something to get their XBL gamertag so you can add them and then see when they are on and join up in a fireteam.
