Good call on the asparagus preparation. I haven't tried searing steak like that though. I'm still getting used to cooking with cast iron, so I may hold off on trying that until I'm a bit more experienced with my skillet.

Set oven to 500F, stick cast iron pan in there so it heats up.
Meanwhile, rub both sides of steak with olive oil, good amount of kosher salt, and ground black pepper. I also like to smash up some garlic cloves and rub them all over the steak.
Take hot cast iron pan out of the oven (with oven gloves) and place it directly on stove top set to high. Leave cast iron on high flame for a min.
Then place steak directly on hot dry pan. After 30 secs, turn over to sear other side.
Put pan + steak back in the oven at 500. 2 mins on each side for rare, 3 for medium

That is a nice piece looking steak you got there, just how I like it.

Damn, olive oil + 500+ skillet = smoked out of my apartment...at least when I did it that way...now I usually go w/ a higher smoke point oil and 400-450 oven...but I personally prefer grilling. Either way- that steak does look great.

I tried to duplicate and ended up with:

Probably over-cooked the steak by about a minute, but it was still pretty good. Bacon-wrapped shrimp is always a plus.

Cheap wine was cheap - meh.

ugh, how can anyone eat steak like that? i love my steaks but if there any more than a tiny speck of pink in the middle, back to the grill it goes!

Did you even cook that piece of meat?

If I wanted the metallic taste of blood, I would just drink the blood.
Well done is where you get the real flavor of your meat.
Granted, it won't be as tender, but if I want tender, I'll have Hamburger Steak!
