But more is better. After 512mb the improvements are less and less when you move up. Ram is pretty cheap now a days though, unless you go for the more OC'able stuff.......

My next build is going to have 1gig pc2700..just for the heck of it..mabe I'll use it..mabe I won't. But it will be there just in case...

I noticed some difference going from 512 to 1gb, but not as much as going from 256 to 512.
