data migration from seperate computers / RAID controllers

My current machine I have is a bit too much now for where I'm staying (it's too hot, too loud, etc). So I'm thinking about selling my dual Xeon and building a 939 Opty in it's place...

However, I currently have 7 hard drives on a Broadcom BC4852 PCI-X controller. That obviously won't be able to go to the next machine. I plan on putting an Areca ARC-1210 in the next machine. However, I can't just pull the hard drives from here, and put them in the new controller. So, I'm trying to figure out options that would let me migrate about 500gb of data over to the new machine, without both machines being online at once. (I'll have to use the money from selling this machine to get parts for the next one).

I was thinking about getting a simple PCI SATA controller, and pulling one hard drive at a time, reformatting, filling it with data, and then pulling it. Once all of the data has been backed up, set the drives aside. Once the new computer is built, put the same PCI SATA controller in, and one by one copy data to the new RAID 5 array. However, I'm not entirely sure if this would work, and I'd rather not take chances.

Anyone have any input / ideas?
