Is there a piece of software that will allow me to record cutscenes as they are being played on my computer? I want to be able to save them individually and watch them over and over if needed.

Depending on the game, you can probably find some utility that will let you browse or watch the individual cut scenes.
 
I've never done that myself, buy maybe HyperCam would work. It's not freeware, though.

The evaluation version stamps a text on the captured video ("Unregistered", I think it was).

That's fine with me. I'm not looking to distribute these things. I just need to watch them over and over for evaluation.

I'll try that out and let you know how it is.
