I've searched all over the net for laptop cases, or enclosures, or screens, or whatever, and have turned up nothing. Do any manufacturers sell notebook cases+monitors with which you can install your own components? Would it be as economically viable as it is building your own desktop vs buying a dell?

If so, could someone point me in the right directions as to where to get parts?

Andy,
Hate to bust ur bubble on this one but you can't purchase enough products to really make it the same as say building your own desktop. Yes there are barebone lappys out there you buy the cas Mobo and screen and you do the rest but I prefer to get my stuff with all enclusive warrantys which those don't have. If you want some names ask and i bet we can find you some.

you can buy a barebones kit(case, mobo, screen, video all installed for you), and add your own ram, HD, optical drive(sometimes), peripherals, etc.

However, this is nothing like building your own desktop, and will cost more than buying a whole laptop from anyone. Especially dell, since they always have their 750 off 1500 coupons every two weeks. If price is an issue, use a coupon and get a dell

Actually it can be cost effective if you want a specific machine. For instance, you can get a barebones Asus notebook with mobo (probly CPU also), probly optical drive (dunno if they have modular ones), & the chassis w/LCD. Just put in your own HDD, RAM, CPU (maybe), optical drive (maybe). You CAN do this and it won't break the bank. But often times its better to get it built by the distributor (from a company like ProPortable) as they can get better prices on components than you can and they will support it.
