Picked it up a Dillards B&M on clearance for 62.47 after tax

This is a pretty good deal considering the manufacturer, and that it a 2LB maker vs the 1lb ones and the closest competition is this which is actully the same maker just doesnt look as snazzy.

Also further review shows this is the same machine as the breadman tr2500bc except its doenst look as nice and doesnt have handles. However the breadman has a light, you can control temp, and it cost more.

I have this model at home - I got it from Williams Sonoma as a replacement for my WS label breadmaker that died after 10 years of use (WS has a lifetime satifaction guarantee on their stuff). I have had it for 6 months and have yet to get an acceptable loaf of bread out of it yet. Right now I'm just using it for dough that I finish in my conventional oven.

hmm...what do you consider an acceptable loaf. Is it burning. Under cooked. Whats it not doing. I havnt opened it yet so thats what i want to know.

I would also like to know what this pread maker is doing that's not acceptable as the price is right in my range for a bread maker.

Additional research shows this bread maker is the same as the breadman tr2500bc except the breadman has a light if I recall and you can adjust the temp on the bread man. In the cusinarts defense it has handles and looks better. But they both cook the same its just the breadman gives you more options.

You know what RideFree - I will go and try your recipe and see how it works. - thanks for the reminder!

As far as question from zikronix - the problem was always on the second rise. The bread would alway start out looking fine but would fall and often have a bitter taste.

This was the same issue regardless of ingredient temps, brand new yeast, different yeast foods, or recipe (usually made a 1/2 wheat, white but also tried on french bread). The only thing I did not try was using bottled or filtered water.

I found two coworkers in my work that have the same maker. and they seem to have no problems. I have discovered that cooking bread is a science and not just a follow this recipe thing.

You can not get ½ wheat to rise properly without lots of gluten!

READ the recipe!
Do not improvise and then blame anything but the baker!

Follow the recipe, this includes you Mr., "I have discovered that cooking bread is a science and not just a follow this recipe thing. "

Exactly following this recipe produces loaves like EC's everytime.
The only real variable is that some breadmaker machines suck and altitude can be a factor.
However, altitude is easily overcome - Sucky breadmakers need to take a trip to the Salvation Army.

oh i have no problem following the recipe...I was merely stating I thought prior to reading about bread that it was some flour, yeast and water. mix and throw into oven.

I had no idea that different flours made different breads, what gluten actually was, how yeast worked and how measurements vs weighing...i mean it gets really crazy really fast.

I was always going to follow the recipe you posted. Because apparently cooking bread is alot more complex than i thought

Sorry I got so jumpy.
It must have come from reading about a hundred posts about how they did something different and got a flop on their hands.

Stupid mods, I now see that saving $3.00+ on a loaf of bread no longer qualifies as a Hot Deal.

Now it's hidden here - Thanks mods!

I've yet to set my eyes on a bread making machine in person, but one is "in the mail" as well as a book. I have been reading a lot of posts. People in the know often advise getting at least one good book on the subject, and there are several. I ordered Bread Machine Magic, Revised Edition.

There are a lot of variables as mentioned already in this thread. It's obvious to me from reading threads that there is no such thing as a fool-proof machine. However I think with a decent machine that isn't defective, some good recipes, common sense and persistence, success is likely.

You can read a lot of reviews at Amazon.com and find informative threads at Google Groups.

RideFree, I LOVE THIS BREAD! IT IS THE FOUNDATION FOR GREAT BREAD... with nuts, raisins, crandberries, you name it. So simple my 2 year old can make it and not screw it up.
