So I am planning on building a PC with 2 radeon 7950 Vapor X cards. The thing is the vapor X uses 2 8-pin PCIE connectors. So what power supply would work? Do I need a PSU with 4x8-pin PCIE or can I use some kind of converter? (Like the 8-pin to molex included) Would this PSU work?

The higher end psus have pcie connectors that are all 8 pin with a detachable 2 pins if you need 6 pin. My corsiar hx1050 is like this for example.

No that PSU would not work. It's doesn't have the native PCI-E connectors you would need and I don't think that 25Amp 12v X 2 would meet the needs of two 7950's - especially if you overclock.

I would look for a decent 750W to 850W PSU. Corsair, Seasonic and PC Power and Cooling are a couple nice brands in that wattage range. Look around online and try to find you best deal.

I'd recommend buying a PSU that outright has all the connections available (native 4x 6+2pin pcie)

Don't buy ocz for psus. Stick to corsair and seasonic if possible. Or even xfx. Get a 800-850+ watts gold/platinum psu if you have the budget. But don't go below 800 watts if possible.
