CPU temps jumping around

After I deicded to do some cable mangement to my case yesterday (Pics here) I've noticed my CPU temps jumping around using Everest. They are any where from 36c to 43c.....at idle or doing minimal desktop work like tryping an e-mail or working in Word. My GPU temp its at 48c or 49c but my CPU temps are jumping all over for some reason. Any idea why its jumping around like this?
