It also depends on how much work that muscle does. If it's an often-worked muscle, it's more likely to be tough and not so tender. It's not all just about fat / muscle content :) I'd think, in the grand scheme of things, the tongue would be relatively tender, right?

Until my kids went to a school that is approximately 90% "hispanic", I never guessed that the kids would rather be called "Mexican" (or "Puerto Rican" or whatever) than "Hispanic". Most of the kids were born here, so they are mostly US citizens (though I seriously doubt that many of their parents are here legally.)

I did. But then again my grandfather and father were kosher butchers.

Having lived up north as well as a southwest border state (currently), I find much more overt Mexican pride up north. Down here everyone is 'hispanic' and no one is "Mexican" because of course that infers they are "illegal", which no one is, lol...

Cinco de Mayo is fascinating. In Chicago its a boisterous celebration of the mexican flag on cars etc., while down here in NM everyone quietly stays indoors pretending they have little association with Mexico. :D

Another funny dynamic while on the subject...NM has one of the lowest unemployment increases in the country during this recession. Why? because construction was such a huge part of the economy, and most of the workers are 'undocumented' or on work visas. So when they (and other undocumented/visa workers) lost their jobs it didn't count towards the unemployment stats, thus the NM politicians can deceptively tout a strong local economy. :roll:

My girlfriend is from south Texas and loves it. I just know she's going to trick me into eating it one of these days............and I'll probably like it. :(

I finally had some lengua tacos recently at the very best genuine Mexican restaurant in my area. I was all psyched for a premier gustatory experience, but the tongue was disappointingly bland and tasteless. :(

yup once skinned and sliced it is unrecognizable. just very fine grain beef. low fat, just beefy good.
