Costco's Ribeyes are USDA Choice, not Prime

Short rib is really good if you know how to marinate the meat or use it for stews. Koreans mastered the art with their galbi/kalbi. Costco boneless short rib prices have doubled since Korea ended their US beef import ban so it's not a deal anymore.

I love cooking steaks on the skillet, but in my house I can't go hot like I need to because it will smoke up and smell up the house for DAYS!

When I'm cooking steaks on the skillet, I know it's not hot enough unless I set off the smoke alarm.

I used clarified butter last night for the steaks (strips from costco). Apparently according to the intarweb clarified butter does not smoke or burn.

The intarweb lies.

For those that have done it, does that pan searing method lead to a delicious steak?
Is it worthwhile to even do it with Prime steaks, or is that overkill and won't lead to the same deliciousness?

Being here in a apartment/dorm, I have no access to a grill. But I'm tired of missing out on good food, and might invest in one of those USDA Prime 4-packs through Costco online. Works out to like 20-something per steak, but for a heavenly taste I think it can be worth it.
And one of the things I have noticed is I'm just not getting basically any red meats into my diet while I'm down here for school, because cooking them myself is always the issue, not to mention getting anything on campus is basically impossible.

So basically, is cooking Prime beef indoors going to give me the reward to the palate that I am seeking? 🙂

Not seeing Prime for any less than that. Even stepping up to the value pack, which is 12 14oz steaks, only brings it down to about $17/steak.

I love real prime steak, particularly a porterhouse 😀 It's expensive and a little hard to find, but so worth it. I prefer to cook it myself, rare.

I went to Costco last weekend and picked up some prime rib-eyes that they had in the refrigerated meat section right next to the choice rib-eyes. They were priced at $10.99 a pound, a bargain for prime. Grilled up great.
