Very real. It has to do with the pressure change caused by the plane's passage. I see similar effects whenever I take off in the right conditions, these cool spiraling cloudlets form behind the propellers at full power when the plane is hardly rolling.

Uh pilots flying mulitmillion dollar jets don't just go out and cruise across the bay or whatever at mach 1+ on a whim. This isn't top gun where you can spill a dude's coffee on his shirt and just get yelled at. Your rebuttal falls flat.
