I honestly thought quiches were much more difficult to make than they actually are. Basically, it's a giant omelette in a pie crust, baked in an oven for a while. The cool thing is this suits my notion of ideal cooking: Throw stuff together in a dish and let it cook without interruption for an arbitrary amount of time.
This particular quiche happens to have onion, baby bella mushrooms and fresh spinach, along with cheddar and mozzarella cheese. I used cheddar and mozzarella because I completely forgot to get swiss while I was out this afternoon. A healthy dose of heavy cream, some salt and pepper and four eggs later it goes in the oven and about 45 minutes later (15 minutes @ 425F, ~30 minutes more @ 300F), then she's done. And it tastes pretty damn good too.
Add another meal to my list of vegetarian meals for my wife.
