Massively overstating capabilities to fulfill arbitrary notions of manliness/superiority has always been funny to me because its such a stupid thing to feel smug about.

Does it also take 30 seconds for those coals to warm up? Do you keep all your equipment in a spot where you never have to go actually looking for things? You keep your charcoal outside right next to the grill along the chimney starter and the lighting materials and the paper?

You know whats faster? Turning the gas on and having it fire up immediately.

Getting breakfast at Jack in the Box is way faster than cooking it yourself. Guess what tastes better? The "inconvenience" of having to start your charcoal/wood earlier to heat up is offset by the far superior flavor.

Charcoal: You want to eat at 6PM? Start up the chimney starter by 5:15 depending upon the amt of coals you need.

Gas: You want to eat at 6PM? Start up the gas grill at 5:45.

What's the diff? You start one earlier than the other, but gas doesn't "save you time".

The heat must come from the precise application of a carbon laser specifically tuned to sear the meat perfectly at a molecular level while leaving the insides at a perfect 131 degrees.

Its somewhat more inconvenient than using charcoal, but the far superior flavor offsets it.
 
Cooked Wagyu beef sliders tonight in a cast iron pan topped with toasted buns, pimento cheese, and red pepper jelly. Smoking salmon tomorrow in a Masterbuilt electric smoker. Doing ribeyes Tuesday on a propane grill. Might do some kind of steak on charcoal over the weekend.

Why restrict yourself? It's all good. Employ all methods.

This. Options are wonderful because all cooking methods bring their own qualities to the table.

I'll always maintain a cast iron pan, especially wonderful for winter steaks - yes, I hate the cold and right now I only have a Weber kettle, so... no use in the winter lol.

I also want a gas grill for speed and especially for food items where smoke flavor isn't necessary at all or I want to preserve and only have the marinated or seasoned flavors stand out.
I definitely want a smoker as well, easier to smoke than with a kettle, though a kettle works when necessary).

I definitely want to get a set of quality stainless steel cookware, and re-season my cast iron (and probably get a larger one, 8" is only good for cooking for one imho), as both have their great uses for stove top cooking that can beat grills any day.

If my next apartment is all electric, I'll definitely be getting a standalone induction cooktop as well, because after getting used to gas cooking, I can't stand electric ranges. Too slow.

If my next apartment is all electric, I'll definitely be getting a standalone induction cooktop as well, because after getting used to gas cooking, I can't stand electric ranges. Too slow.

I agree. I hate electric ranges. We are looking to move out of the country and into town. We have passed on like 3 houses because it was all electric.

Get a propane tank + line to the range. Natural gas is convenient but when that is not available, propane is next best option.

we have propane now. while expensive it works.

I would prefer to find a house with NG. but if we can't find what we want I may just go this option. since it would be just for cooking i wouldn't need a 500 gallon tank.

The charcoal is stored in the garage. The grills are on the back deck. It takes me more than 30 seconds to gather all the stuff and walk to the deck. Some of us live in larger houses.

I've Weber charcoal grill I used for the past 15 years. It's not like I don't know how to use charcoal. I also have cast iron charcoal grill. And Weber smokey mountain charcoal smoker. But I also own Weber Genesis S330 propane grill, cheap portable propane grill, and two roofing torches that will put out like 400,000 btu/h. If I want to I can heat up the charcoal in minutes, I can easily do it with the roofing torch instead of using the chimney starter. I could also just use the roofing torch to cook. I need to try it with my Anova sous vide one of these days. But the last thing I want to do when I come home after a long day is to light the charcoal and wait to cook the food. It's about using the right tool for each job.

Ehh, cooking on a high temperature grill, doesnt matter too much if its charcoal, wood, gas ...

Sure, charcoal can add a bit of a nice smokey taste, but, usually that smokey taste is more significant during slow cooking. When you spend 14 hours BBqing some brisket, thats where the wood fire vs charcoal vs gas is going to matter the most....

It's pretty much impossible to find a place here in city limits that doesn't have NG. Water Heater, Furnace, Range and Clothes Dryer are all on it at my place (built in 1925) wouldn't want any of those on electric.

I grew up with a direct connected natural gas grill in the backyard in the 70's

Convenient yes, I still prefer Charcoal.
