Just bought a 2.3 pound lobster... how long do I boil him for?
I hate overcooked lobster

Is it true that lobsters scream or make some kind of noise when you put them in the boiling water?

The fluid in their bodies boils, and the gas escaping through their exoskeletons makes a sound.

Boil that bitch for about 20 minutes. Depends if it was *fresh* from a fish market or was it frozen. If it was frozen he'll have to cook it longer and it will taste nothing like it was fresh. Fresh is THE ONLY way to go.

I had crab today and thought it tasted different and it turns out it was frozen and not fresh. When I mean fresh I mean we buy the crab still alive and I have to kill it myself then boil it.

Yeah jooksing crab here in England is pricey compared to beef, chicken etc but I suppose thats the same in the states?

If you go to a fish market or a chinese superstore you can get fresh crab around £4 ~$6 each. Lobster on the other hand is more expensive.....

<-- wants FRESH crab not the frozen stuff he had today! But it was alright I still had crab:D

How To Cook A Maine Lobster
The two most common ways to cook lobsters are steaming and boiling.

Steaming lobster
Pour 2 inches of seawater into a pot large enough to comfortably hold the lobsters. Some cooks also place a steaming rack large enough to hold the lobsters above the water, in the bottom. Bring water to a rolling boil over high heat. Place lobsters in the pot, cover tightly, return to a boil as quickly as possible and start counting the time.

Steam a lobster for 13 minutes per pound, for the first pound. Add 3 minutes per pound for each additional pound thereafter. For example, a 2-pound lobster should steam for 16 minutes and a 1 ½-pound lobster should steam for 14½ minutes.

Boiling lobster
The number of lobsters to be boiled determines the minimum kettle size. The water should fill the pot one-half to not more than two-thirds full. Bring water to a rolling boil over high heat. Place lobsters head first into the pot, completely submerging them.

Cover the pot tightly and return to a boil as quickly as possible. When water boils, begin counting the time. Regulate the heat to prevent water from boiling over, but be sure to keep the liquid boiling throughout the cooking time.

Boil a lobster for 10 minutes per pound, for the first pound. Add 3 minutes per pound for each additional pound thereafter. For example, a 2-pound lobster should boil for l3 minutes and a 1 ½-pound lobster should boil for 1l ½ minutes.

Note: These times are for hard shell lobsters; if cooking new shell lobsters, reduce boiling or steaming time by three minutes. When the antennae pull out easily, the lobsters are done.

went over to cape anne MA two days ago and had fresh lobster, mmmm...

my mom was telling me something about a place out on cape cod that was doing a whole lobster bake for $14 between 4 and 6 pm leading up to xmas. that was a hot deal.

I reccomend steaming it.
Steam a lobster for 13 minutes per pound, for the first pound.

Oh yeah. I prefer lobster cantonese, myself. Or maybe with some black bean sauce and green onions.

I'm kinda pissed about the electric stoves i'll be using at college. You can't make any good chinese food without a gas burner. Plus, a wok doesn't exactly fit on an electric burner.
