Comfort Food

It doesn't have to be food that's traditionally thought of as "comfort" food, I'm just curious.

I have a couple. My grandma's macaroni and cheese (I follow her recipe to t he letter, and still can't get it to turn out like hers), homemade lefse, homemade pizza.

Also, if you have a recipe, that would pretty much rock.
 
Homemade cinnamon rolls and freshly brewed coffee.

If you're laying in bed on a Sunday morning and you smell this, you'll wander into the kitchen to see what's cooking.
 
Me, it really is Kraft Mac and Cheese (the 30 cent box, not the expensive fancy shaped stuff). Quick and easy, great when you are too stressed to cook anything else.

Sure homemade pizza is great, as would be a pecan pie. But I certainly won't take the effort to make those when I'm in a bad mood/sick and need comfort. By the way, what is lefse?

And your grandmother never followed that receipe. She may have 50 years ago, but she had 50 years of alterations to make it better. Trying to copy it yourself is futile.

 
Cooking/baking somethings actually help me out a little bit. I'm not the greatest cook (although I do consider myself a pretty good baker), it's just fun for me. So the process of making it is good for me, at least.

Lefse is a Norwegian thing (maybe it's Scandinavian in general, but I'm Norwegian and claiming it). Looks similar to a flour tortilla, but it's made from potatoes (we usually use small red potatoes), flour, butter and sugar. I guess a lot of people also put cream in it. I've seen it in some of the more "upscale" grocery stores. Warmed up with just a little butter and sugar on it, it's wonderful.
 
Mother-in-law lives with us and makes some old hungarian dishes that are to die for. My favorite is a lamb dish that is marinated then cooked up in a gravy with dumpling. The literal translation is saucy meat. Another is Paprikos chirka, a chicken dish cooked in a paprika sauce(good sweet hungarian paprika and so much its orange) over homemade dumpling like noodles.

And Costco makes the best pumpkin pie i have ever tasted, all pumpkin and spices, no filler or syrupy stuff.
 
After eating a lot of it tonight, I think I have to add paella to the list. Yeah, kind of a bitch to make, but I think on occasion, it would be worth it.

black bean burrito (vegetarian - w/ brown rice, guacamole, cheese, sour cream, onions, peppers, mushrooms inside)
egg salad
fettuccine alfredo w/ veggies
stuffing
mashed taters w/ brown gravy


damn im so hungry now and its like 2:30am... its all your fault! im gonna go make a peice of garlic bread and dip it in the left over alfredo sauce.. mmhmm some basil on the garlic bread too
