No, cops cannot enter your house without seeing anything inside, or without a search warrant. If they see the drinking going on then they can come in and book people, but if they can't, they need a search warrant.

Signs of intoxication has always worked, least when I've seen parties get busted.

My college sends undercover cops to parties now to break them up. So now when we throw parties we ask everyone if they are a cop before letting them in :)

and then when they say "no" and walk in only to catch you red handed, what do you do?

as mentioned above, they're not allowed to lie and say they're not a cop.

Actually, I did research on this and that's a misconception.
The key is, they cannot lie and say they're not a cop in order to persuade you to do something illegal that you normally wouldn't be inclined to do.
If you're already drinking you're screwed.
If the (undercover) cop hands you a drink and persuades you to start drinking, that's a different story.

The College parties I've gone too were held at a house in the basement for the most part. Probably 200 people in the house and they were very strict about the cans being picked up. If you wanted another drink, you had to turn the can in too. They also had this fold down covers for the basement windows so that the cops couldn't see into the basement and come in, pretty slick. Someone would yell "cops rollin" and we'd shut the window covers in a flash. I don't drink so I didn't have anything to worry about but I still had a great time being the only sober person in the place.
