Ok, I know they're healthy and all, but they taste so bad. I didn't know what they were when I got them, but after one taste, I almost lost my appetite. It tastes (and looks) like seaweed.

Blaphemy. Cooked down with a couple hame hocks/ salt and pepper then topped with a little vinegar or hot sauce they are yummy. Almost as good as poke salad.

They are easy to screw up though.......

The nasty ones are turnip greens.

Son, you come on over, I'll cook us up some greens, fried chik'n, biscuits, corn bread, iced tea and sweet potato pie...

Look, yankees, you've got to cook the fvck out of greens before they're edible. It ain't pretty, it ain't good for you but if you just sautee them in a little olive oil you'll be crapping leaves for two days.

Cook them suckers down in bacon grease and onions or stew them up with ham hocks or salt pork. That's the only way to do it.

The collard greens you find at regular grocery stores are often too mature--tough and fibrous. That's why they have to be cooked Southern style.

Go to an Asian grocer and buy the good stuff--young and tender greens.
