Cold dishes

well, summer is just around the corner, and with temperatures already hitting mid 90s here, it's getting a bit too hot to cook.

So what do you guys recommend for cold dishes? I'm a little sick of the sandwich + salad standard already
 
I always order more pizza than I'm going to eat so that I can have some yummy cold pizza the next day.
 
I like cold soups when it heats up outside.
Ceviche,
Avocado,
Vichyssoise,
Gazpacho and,
I make a mean Cherry soup with cream and brandy.
 
I think next week my work lunch will be pasta salad with chicken. I will throw in some sliced red onions, cherry tomatoes, cucumbers, and maybe some baby spinach.
 
my mother used to make an awesome cold curry rice dish.

I just love home made potato salad.

pies and cakes are great too.
 
It's not a cold dish, but I usually grill about half the meals during the summer. It at least keeps the heat outside, and when it's really hot and sunny I hardly have to use any propane 🙂.

My wife makes this meal with chicken, onions, peppers, and tomatoes all cut into chunks and grilled. You also grill the bread. Then you let the chicken and veggies cool and put them in an avocado-pesto-type sauce, mix it up, and serve it on the bread slices. It's one of our favorite summer meals, and I think we just got it out of our Betty Crocker cook book. If anyone wants the recipe, I can post it later.

Edit: Chicken-salad croissants are really tasty too.
 
Gotta contribute a shout out for potato salad! In our family it's made with lots of torn up lettuce mixed in, and maybe add a garnish like sliced red or green peppers, or slices of hard boiled eggs, or mushroom pieces.
