Many varieties of pork butt come without bone. Absolutely no difference in taste.


Provided you are talking about dry cooking methods anyway. If you think bones make no difference in flavor other ways then I guess you've never had a good pho?

I actually don't care for chicken wings that much. I like flavorful meat and don't have an issue with eating around bones, but wings always struck me as too much work for too little meat. I'm not interested in eating gristle, ligaments and veins either. With the emphasis on heat most wing fans seem to fixate on, I feel like the issue of meaty flavor with wings is almost an afterthought.

Chicken thighs are where it's at if we're talking about bird, IMO.

Since the point of wings is to cover it in sauce or seasonings, why deal with the mess and hassle of eating off the bones? Boneless wings for me.

If you want great chicken flavor, you shouldn't be eating the wings in the first place. I agree with kage69, go for the thighs in that case. I happen to think bone-in thighs are a bit tastier than boneless thighs, but it is a subtle difference.

We're talking about eating wings, not making stew. So I would have thought that dry cooking was obvious.

I also doubt that people are cracking open the wings and eating the marrow these days.

What's all this talk about eating wings for a meaty flavor? It's all about the skin, which should be obvious given the ratio of skin to meat compared to other cuts. The flavor is from the skin/fat, not the meat.

Boneless is fine assuming that it was skillfully done and includes all the skin and meat in one piece. While the bones have flavor, I'm pretty sure the flavors can't transfer into the meat during the brief cooking time for wings.

And while really sauced up wings are good too, you can actually eat them grilled with just some salt and as long as you do that with skill it is amazing. The Japanese does this well.

The little local Asian place about a mile down the road makes some of the best hot wings I know of, and I live in pretty much wing house central, as Hooters started here and are many other ones like Kerrs, Tilted Quilt, Dogwaters around. The celery and blue cheese wasn't from there obviously.

Wings need to be cut and trimmed just not for presentation but to make it easier to eat in one bite. You have to take several bites of that wing to eat and you'll leave lot of the meat on the wing. If you're a professional wing eater, you put the piece of wing in your mouth and just pull out the bone in one piece leaving the skin, cartilage, and the meat in your mouth. It's like one effortless motion.

We can all agree boneless chicken wings are not wings.

Oh my bad. I was under the impression wings are fried in oil (which doesn't sound very dry to me). Not sure what I was thinking. Funny how you previously included pork and such earlier though.

I also doubt that people are cracking open the wings and eating the marrow these days.

Probably has a lot to do with birds having hollow bones. YMMV.

I will admit, I love me some crispy chicken skin. The yakitori places are masters of this, it's true.

The bones tend to be IN the meat so oil isn't reaching much of the bones. Also, pho boils the bones for hours to remove all the collagens/marrow/whatever from the bones, you're not getting that with a 5 minute fry. Also, frying tends to flash boil water so, alot of the water does in fact leave the wing, so its probably drier than you think it is,

Boneless. You get more meat, and it's less work to eat them, so you can eat more!

I use the term meat very loosely here. I doubt the boneless are actual chicken wings, but probably just processed meat.

Yeah, usually served up with pickles denotes that style... Good stuff!

Also what about breaded vs naked (non-breaded) wings?
Some people I know are picky about it. I like it both ways unless it's a damn dough ball.

I happen to think bone-in thighs are a bit tastier than boneless thighs, but it is a subtle difference.

Absolutely agree they taste better with the bone in, especially if you're sticking them in the oven.

To be honest I can't understand people who get pathetic about bones. It's too messy, it's too troublesome.

Sheesh, the apple done fell a long way in that case.
